Watermelon & Strawberry Caprice Salad

The heat of summer changes my appetite drastically. I don’t want hot things when it’s hot. I have already taken of three pounds in the last two weeks living on ice cold milk, iced coffees, homemade berry and ginger sodas, fresh made orange Gatorade and other homemade juices, cheese and shrimp. Interestingly I didn’t think losing weight was necessary because the extra weight makes my face and legs look healthy, but this starch-free way of eating has created a better body for me. This fruity Caprice salad was an early morning start to my day when the cold moist fresh mozzarella sounded good, but it was too early for tomatoes to sound good. The watermelon was fresh off the farm and I scooped it into balls. The wild strawberries and a couple other types and the basil were from my garden. I sprinkled the mozzarella with red clay salt and drizzled a teaspoon of REAL olive oil over it. The mozzarella had only 5 grams of fat and the olive oil another 5. It wasn’t a high protein meal, but I had already had a cup of skim milk before my coffee and lunch wasn’t far off.
