I would like to eat more cheese, but cheese made with just animal rennet or vinegar is really hard to find in my area. I had found some good ones at an Italian Market online, but I really don’t like paying the refrigeration charges. So I tend to just drink whole raw milk instead. Recently reading cheese labels I was surprised to see that paneer is made with only vinegar.
So today I figured that I would figure out something to do with it. Since I really don’t like spending time on making my meals I thought I would first try frying it. So I got my pan hot added in some refined coconut oil, cut my paneer in about one half-inch thick slices, and quickly fried one to test. When it was well browned I removed it from the pan, seasoned it with a little salt and was really happy with it! So I washed up some sprouts and got them on my place. I fried up the rest of my paneer slices, got them on my plate and seasoned them with an Italian Parmesan, tomato & basil salt. I added a teaspoon of Meyer’s lemon olive oil and some of my homemade balsamic syrup and boy was this ever good. This is something I will be eating more of to keep my weight in check.
I buy my raw milk at an Indian market. I’ve seen the paneer but didn’t know what to do with it. I’ll pick this up now and give it a try.
I am going to use up the rest of my block a couple of more ways. I am thinking to do an Italian version like fried mozzarella, topping it with a little pizza sauce or marinara and finish it with some torn basil. Thinking about yesterdays version I think I am going to try adding a hint of butter to the refined coconut oil for frying up the paneer to keep it from sticking to the pan. I used to do polenta like that. Slice it then fry it in butter and top with marinara and Parmesan. Loved it. I’m anxious now to try this.
