This plate was FANTASTIC! It was a beach vacation in my mouth! Fresh mozzarella is so easy for me to make a light meal out of. This combination was not only a wonderful sweet and salty combination, but the crunch of the butter macadamias was satisfying. Cheese and fruit pairings are so ideal for losing weight, and mozzarella is lower in fan most cheeses. This would also be a perfect evening meal to set oneself up for a good night sleep which is so important for losing that unwanted fat quicker. Kiwis are on the top of many recommended sleep food lists. Yes kiwis have seeds, but you can sub another fruit. I am growing kiwi berries, so I am going to eat them on occasion. They beat a restaurant splurge. Don’t go overboard on the macadamias. There are good studies out that show that macadamias speed up weight loss, but the magical number is five of them a day. Macadamias is one of the only nuts that Ray Peat said good things about, with cashew second in line. I put my macadamias in a baggie and crush them up with the flat side of a meat mallet to get the job done quick and cleanly.
