“Since cholesterol is the source of progesterone and testosterone (and pregnenolone, DHEA, etc.), and sugar increases it, having fruit rather than starch might increase the hormones. Those hormones, antagonistic to cortisol, can help to reduce waist fat.” -Ray Peat

“High starch foods tend to be bulky and may leave you feeling full or lethargic. One study found that participants who ate less starchy carbohydrates experienced marked improvements in their reported fatigue, emotional well-being, and food cravings.”

This is it. People are medicating themselves out of the illnesses they ate themselves into…

This is from my Instagram post @raymendeat today….

One of the biggest issues in the
health of people nowadays is grains. It is a touchy subject and I am not even going near anyone’s bread or oatmeal to take it away, but instead suggest to minimize the damage from it with a swap. First know that our grains are not what our grandparents ate. Besides the glysophate, aka “Round-up”, used in growing and killing the wheat, to dry it quicker for market, it has also been scientifically altered. This altered state leaves the wheat with larger chromosomes than the original had and our bodies just don’t now how to use this “Frankenwheat” and so it causes inflammation and chaos in the body. The younger people may not notice this downward spiral immediately, but they will eventually. Knowing this I don’t eat non-organic wheat at all and at home for special occasions I make my flour things with the original “Einkorn” heirloom wheat. I buy the all-purpose flour. It is feels so much better than the gluey stuff that is destroying health and teeth. I made these pear tarts with it for Thanksgiving. These have been a holiday request from my sons and others for at least three decades. They are like a better apple pie, but with cream in the filling. These keep in the fridge for days and I like heating them in the oven on a cookie sheet with a pat of butter on top. These are indescribably delicious! Don’t be mad at the messenger now on this wheat issue, carry on!

                “I don’t have
                an eating plan,
other then to be perceptive and
                to learn about your physiology,
so that you can adjust things to
                your needs.” -Ray Peat

I recently made bread with spelt flour. It was the delicious devil. I ate a moderate amount day one and was fine. Overate it day two and regretted it. I think even ancient grains are not ideal for me. The large dose gave me a slightly gloomy feeling. Live and learn!

I don’t know how Spelt flour would feel since I have never had it.
