A Bright Life Inspired by Dr. Raymond Peat

Occasionally I make my own gummy bites for snacks, with a meal, or as a meal.
What you need: Sweet Orange Juice, Gelatin, Sugar
1 3/4 cup OJ in a pot (do not boil)
1 3/4 cup OJ in a glass vessel to bloom gelatin
9 tablespoons gelatin (I prefer Great Lakes)
8 tablespoons of sugar (I currently have Organic Beet Sugar by Now Foods); you can also use honey. Three tablespoons of honey would be equal to 1/4 cup of sugar.
Add OJ to glass vessel and stir in gelatin allowing it to bloom. While the gelatin is blooming, pour OJ into a pot, heat on low. Once the OJ is hot enough, stir in the sugar or honey. After the sugar is dissolved, it should be time to stir in the gelatin. You will do this until the gelatin is completely dissolved in the OJ & sugar/honey combo. Once the gelatin has dissolved I allow the mixture to sit on low heat for a few minutes. After that I pour the mixture into silicone molds I have. Set the mixture in a fridge for at least 60 minutes. In the end, I have 48 gummy bites proving at least 2 grams of protein per bite. I’ve not calculated the amount of sugar. They are yummy.
I am going to get some oranges today @Gawdawg to make these! Do you keep them at room temperature?
They must be kept in a fridge or they will melt. When I eat eggs I have 2-4 gummies to counter the anti-thyroid amino acids.

I have not made them yet. I had unexpected overnight house guests which threw my week off.
I finally got around to making gummies! They were so quick and easy too. I wanted ones that I could put in coffee to take the place of collagen powder and keep them on the counter near to coffee. So I mixed 3 tablespoons of gelatin to 1 cup water and sweetened them with maple sugar. They melted instantly in my coffee!
UPDATE: These do need to be kept refrigerated for storage. I kept them on the counter in a jar with a lid on and by the beginning of the third day they started to get mould.

Do you have a recipe for fruit jelly??? I am on a break from my no meat diet
@Anonymous I haven’t made fruit jelly yet, but I was making a lot of marmalade and jam earlier this year using natural pectin from fruit and citrus peels. With that in mind I’ll see what I can come up with for fruit jelly.
@Gawdawg Here is the recipe to my first round of orange gelatin gummies. It made them without orange juice and used peels instead. Orange peels are a powerful anti-inflammatory. The peels are good for fighting cancer, boosting the immune system, killing viruses, subduing histamines, good for allergies, for digestion, lowering cholesterol and they are good for weight loss. Orange juice can’t do all of that in such a small amount.
UPDATE: It is best to keep these in the refrigerator for longterm storage. I kept mine in a sealed glass jar and they started to get mould on the third day.
1. Bloom 4 tablespoons of gelatin in a half cup of cold water
2. Add to the bloomed gelatin the zest of 3 ORGANIC oranges
3. Add 2 teaspoons of real vanilla extract
4. Add 4 to 5 tablespoons of sugar
5. Add 1/2 cup boiling water and stir until the sugar and gelatin are dissolved, pour into mould and cool.
