Exactly right about misunderstanding Ray Peat. I finally get a better grasp of what is needed, back then we were so in a bad place that we couldn’t see through the fog to understand Ray Peat or anyone else, even ourselves. Now I just need to figure out how to put it all together. Yes, I bought my honey at a local farm. I am not sure if Quest reads this thread, but mentioned us on here being worry warts😊, well not like she thinks. I don’t worry about food, I just learn about how and were its made. I worry about financial, health and others tool some degree, but not like a crazy person😊 Cari, I was thinking more about the list of foods I read certain organic food isn’t worth buying. If I read what you wrote, no corn, but Ray thought it was okay, or is it for a different reason, as well as milk and chocolate?, they okay. Okay finished with the questions. 😝

Ray said masa was ok and super sweet corn too. He said if it is not super sweet that it means it is high and starch and to avoid it. Otherwise he did not think other corn products were good. Corn is GMO’d now that really nobody recommends it. I buy corn and soy free eggs to avoid corn.

Masa, or nixtalmalized corn, is very different from regular corn. The process reduces antinutrients, PUFA content, phosphate, while greatly increasing the calcium content. Here’s a short video about the nixtamalization process-
If you look for tortillas with “lime” listed on the ingredients (especially when the only others are corn and water), those are made with nixtamalized corn. They generally have a better taste than standard corn tortillas, too.
If you happen to live in SoCal near a Northgate Market, they make corn tortillas in store using this process. They are excellent, and you can often find them on the shelves still warm.
Cari, it’s good to hear that Ray spoke favorably about Sweet Corn. That’s favorite type of corn on the cob to eat!

September 26, 2024 at 3:51 pm #3596@Beachbum I recently came up with 13 principles that were mostly inspired by Ray Peat regarding health. I shared them in another thread, but I will share them here as well, as they might be helpful to you. Feel free to use the ones you understand, and leave the ones you don’t (or don’t agree with), and of course, add to them or edit them as you see fit-
I also came up with 13 principles to experiment with along the way. The first, and overarching, is belief or mindset. My belief is that it’s best to either think in the positive (eg, “I am lean,” “I am getting leaner”) or think in questions (eg, “how do I get more fit? How do I up my metabolism?), and not think in the negative, or what you don’t want (eg, “I’m fat, I’ll never lose weight”). If the positive affirmations don’t feel right, start asking yourself questions about them instead. You could also try “I allow myself” instead of “I am” (eg, “I allow myself to be lean and strong” as opposed to “I am lean and strong.) That will get you thinking and focusing on where you want to go, instead of what you don’t want.
The other 12 are principles, and I’ll just list them off-
1. Get more red and infrared light
2. Increase Carbon Dioxide, and retention
3. Live at higher altitude, or simulate altitude.
4. Deplete PUFA/Lower MUFA (both in body and diet)
5. Increase Anti-inflammatory Amino Acid to Inflammatory AA ratio (or more simply, glycine/methionine)
6. Increase NAD+/NADH ratio
7. Keep Iron (Ferritin) near deficiency
8. Increase Testosterone to Cortisol ratio. (and Progesterone/Cortisol for women)
9. Keep Thyroid levels high
10. Keep Vitamins and Minerals abundant, (Vitamin A, B1, Niacinamide, Biotine, D, E, K2, calcium, magnesium, and sodium, to name the ones I really focus on.
11. Increase Dopamine to Serotonin Ratio
12. Improve Digestion
There’s some overlap, some have very simple and easy solutions, others might take time, and others might require a major life change. But, you can play around with a few or all of them at different times. I really started focusing on the Glycine to Methionine ratio, and really adding a lot of Glycine and gelatin and collagen to my diet in October. That led me to discover beef tendon, which led me to experiment with a very low fat diet for a couple months, and I that is a tool which I might bust out again, but probably only for couple months, max, at any time. The crazy thing, with the low fat, high glycine/gelatin diet, I got super smooth skin on my elbows and heals which had been very rough before. That wasn’t even something I was that concerned with, but it was a nice bonus. The smooth heals and elbows have stayed, even when I went back to a higher level of fat (but still pretty high glycine/gelatin).
September 26, 2024 at 6:20 pm #3597Thank you both. Theses are very helpful replies. I will look into the info. As for asking about corn, it has nothing to do with my weight concerns. It’s more about the helpful and that I have trouble with not having bread etc. Anyway, I may go with the baby potatoes Cari posted as my substance factor if I have noy problems. I will keep you posted. I haven’t made any changes yet.

September 29, 2024 at 3:13 pm #3623The baby potatoes and sprouted grains are very good as a grain starch replacement. Another thing to keep in mind is that certain fruits like bananas and apples and some others are starchy too and are best eaten cooked or avoided.
