Cottage cheese has some major protein content for very little of it. Even the whole fat versions are not very fattening. The problem with cottage cheese is it’s lactic acid content. Lactic acid causes pain and inflammation in the body and even cancer. You can tell how much lactic acid is in a cottage cheese by it’s tartness. The same goes for yogurt, which is why I stick to a full-fat Greek yogurt. I took to making a batch of cottage cheese last year and I am going to make another batch and post about it. It was so fast and easy to make and the flavor and texture were so much better! Ray Peat rinsed his cottage cheese, but I have found a full-fat one I like that isn’t tangy at all. One half cup of it has only 4.5-grams of fat for 14-grams of protein! That 3 to 1 ratio is great for losing fat! I like marmalade with my cottage cheese because it packs a nutritional punch, it is easy to digest and is a concentrated sugar source. The Cherimoya was something extra. Don’t eat the seeds!
