I love vacation food, especially good seafood. This soup reminds me of just that food. What I really like about this stew, besides how good it is, is that it is so fast to make. The coconut oil in it too makes this not only a good weight loss/maintenance food, but the whole thing makes for a good evening meal. Though meat messes up my chance at a good night sleep good fats and seafood help.
I forgot to put the cream in this photo. Start by chopping up about 1/4 cup or more of sweet onion. I usually use jarred roasted bell peppers, but I roasted some myself the other day and made extra for this, chop up about 1/4 cup worth of them. In a heavy soup pot melt 1/4 cup of UNREFINED coconut oil. When it is melted add in the onions and a teaspoon of salt and cook on medium high heat until slightly browned. Add in the chopped peppers and a large clove of chopped garlic and cook for a couple of minutes.
Add in a pound of shrimp, about one and a quarter cups of chopped fresh or canned tomato, two tablespoons Sriracha, a half cup of half & half, a half cup of cream, 1/4 cup of fresh chopped cilantro and a tablespoon or two of fresh lime juice. Cook this until the shrimp are just cooked about five to seven minutes. Taste, season with salt and serve.
