Custard Apple Baked Oats

I like oatmeal, but I don’t ever eat it, because I am always aiming for protein in the morning and afternoon. It always seems like a great food to set me up for a great night sleep, but by the time bedtime comes I am done with my day and don’t feel like cooking something. This simple little baked dish of deliciousness solved the problem. I can it it warm in the morning and cold at night. I like that it is not a lot of starch, but just enough to keep the “system” moving.

Start by preheating the oven to 325 degrees. Generously butter the insides of two 2-cup glass baking dishes. Put them in a bigger glass dish, and fill the bigger one almost halfway full with water. Put two tablespoons of instant oats in the bottom of each one. I use sprouted oats, because the sprouting process makes the oats more of a plant than a grain, which makes their nutrients more available, it is better for teeth and bones tpp.

Next peel, core and chop an apple into small pieces, and divide it between the two dishes. In a blender, blend together 1.5 cups of whole milk, 2 egg yolks, 1/2 teaspoon of vanilla extract, 1/8 teaspoon salt, a little fresh nutmeg, the zest of one lemon, and 3 tablespoons of sugar. Blend only for maybe ten seconds, and pour over the apples. Bake on the middle rack of the oven for about 40 minutes. When these are done let them cool for about ten to fifteen minutes. I like this warm with a little maple syrup on top. It reminds me of warm bread pudding. I like to eat it cold too, which reminds me of rice pudding.

You can play with this recipe, and put the apples at the bottom and top them with brown sugar and cinnamon, and add the oats on top. Pears and peaches are welcome too!

  1. I like this idea, it seems quite versatile and while like yourself @Rinse & rePeat I look for protein in the morning, this would be a very good pairing for the carbs part of the morning breakfast. Or an excellent dessert at the lunch or evening meal.
