Greek Yogurt with Mango, Honey, Macadamias & Strawberry Mint

This was SO good, like I was eating dessert! Yogurt isn’t something I would normally eat because of the lactic acid, but Greek yogurt is much lower in it, so I was indulging here and there. I recently found a way to reduce yogurt’s lactic acid by straining it through a coffee filter set in a sieve over a bowl. Letting the yogurt sit overnight like this results in a lot of watery lactic acid in the bowl. Let it sit even longer and even more comes off. Not only is the texture better with this strained Greek yogurt, more dense and less tangy, but it a more decadent yogurt. Though the macadamias are high in fat, Ray Peat says macadamias are the safest nuts to eat. I have also read studies that have resulted in people losing weight eating just a few of them everyday, and my portion was spent well here adding a nice crunchy texture to all this creamy sweetness. Just a 3/4 cup portion of full-fat, 5%, Greek yogurt has a good amount of protein, for 9-grams of fat. I can’t imagine yogurt getting any better than this combination! As for the strawberry mint, if you are going to grow herbs this one should be a must to grow. It really has a strawberry flavor!
