Cottage cheese is a great fat loss food, but it isn’t worth it if it is full of gums, carrageenan and lactic acid, which all come with their own unique health problems. I have found cottage cheese brands that don’t have these nefarious ingredients, but the lactic acid is still always a problem. You know how much lactic acid is in it by how tart the cottage cheese is. Ray Peat rinsed his, and I tried that, but it wasn’t tasty at all. Recently a friend said he put his yogurt in a coffee filter and let it sit overnight to get let the lactic acid to drain out of it. It did this with the cottage cheese and it worked, with a lot of that lactic acid water in the bottom of the bowl, that I put the sieve with the coffee filter and cottage cheese in. Now I can feel good about having cottage cheese and this is one great way to have it. Not only does boiled egg adds it’s own unique nutrition and an extra boost of protein, but it adds some texture for the salsa as well so it isn’t just a bunch of mushy food. Some cold bay shrimp would be a good addition to this as well.
