Yellow Carrot & Fresh Pear Salad

The Ray Peat carrot salad has been a hard one for me to stick with. Firstly it just never sounds good when I am looking for a meal. Being that it has an antibiotic effect and should be taken away from a meal I never think to have it between meals either, and I don’t have any issues to need it. This one I make I love though. What I also like about mine is that it doesn’t need the added fat from olive oil to give it flavor so mine has zero fat which is great for those wanting to lose weight. I had it yesterday just because I had some rainbow carrots and the quiche that I had in the oven was about an hour away from me getting to eat it.

Since the carrot salad is like a yarn mop, getting a lot of surface area from the carrot is the optimal way. I peel the carrot then run my peeler so fast up and down the length of the carrot. Before doing this though I peel and core my pear. Usually I make this with an Asian pear because I like the crunch, but this time all I had was regular one. Cut the pear into slice. I use the slicing side of a box cheese grater to make quick work of it, but chunks could be good. Toss the pear slices in maybe a tablespoon of pineapple juice to keep them from browning. Alternately you could just double up on the vinegar mixture to keep them from browning, and maybe that isn’t even necessary if you get everything tossed together quick enough. I mix a teaspoon of rice vinegar with a teaspoon of sugar in a small jar, shake it up good and toss the carrots with it and add in the pears. Give this a little salt and it is so good. It is refreshing and it really satisfied my anxiousness for that quiche.
