Spanish-style Creamy Roasted Garlic, Onion, Peppers, Egg & Grass-fed Beef Hot Dog

This was my make-do meal on
Saturday and it was another-level good. I seem to
always be low on ingredients and rubbing two
sticks together to get myself a meal that I will
enjoy. I always have a freezer full of meats that I
order online, but that takes some planning and
defrosting. I just don’t like buying a lot of fresh
groceries and watch them age and feeling the
pressure of using them up before they end up
wasted so I don’t buy a lot. I don’t care to shop
often either. This seeming problem is really a
blessing because it makes me kick into a creative
mode. I often find that these creative times are
the most delicious and I am pleased with myself.
I am liking this kind of cooking, putting everything
and anything in a pan or a pot and walking away.

For this I had one hot dog left and one big
jalapeño and a little bit left of some really good
hot sauce that I took home from a restaurant and
so I built around these things. I rubbed down the
jalapeño with some olive oil as well as a couple of
baby bell peppers, some garlic cloves and a thick
slice of sweet onion and roasted them in a 375-
degree oven for twenty minutes. Then I turned
down the oven to 350-degrees and added in my
sliced hot dog and an egg, poured cream over
the egg and sprinkled everything with ground
cumin and salt. 

Finally I poured that little bit of rich smoky hot sauce over the egg and added in some finely chopped raisins and cooked this for about 8-minutes more. I ate this straight out of the pan and every bite of it too and it was amazing!

Cooking this way
without a plan or much to work with is the theme
of my overall life. I don’t stress anymore about
anything being anything except what it is. I’m not
afraid of imperfection and embrace the quirky
differentness of things, experiences and people.
It it good for my health to be this way. Letting go
of expectations in every part of my life has been
a game changer and I am loving all of the
wonderful surprises. Don’t go omitting those
raisins either. I don’t care for raisins much and
they may seem odd here, but they are that
unexpected ingredient that goes so well with
spicy things
